I can’t believe it’s a week into November and here we are posting a smoked chicken recipe! We plan on smoking year-round this year, so there’s no stopping us! The deliciousness of smoked and grilled meats shouldn’t be saved for only the summer months!
Caleb smokes his whole chickens on his Weber charcoal grill. Yep! Your charcoal grill can be used as a smoker!
How Do You Smoke Chicken on A Charcoal Grill?
When you cooking over direct heat you need to make sure you have enough fuel (hot coals) to cook whatever you’re cooking long enough. It’s the same thing with indirect heat, but you need a lot more fuel (hot coals) that you’ll burn at a lower temperature for a longer period of time.
Light your coals and set them off to one side of the grille. Put the grilling grate back in the grill. Then, close the grill and adjust the vents to your desired cooking temperature. Our Weber grill has one, but, If your grill does not have a built-in thermometer you will need to buy one. Weber makes The Smart Grilling Hub that is compatible with any grill.
Once your coals are to temperature, add your smoking chips. For Caleb’s smoked chicken recipe he used Hickory, but any hardwood will work.
And now you’re ready to smoke your whole chicken! Smoking meat on a charcoal grill will take some practice, but do not let it intimidate you!
Caleb's Grill Smoked Chicken Recipe
- 1 tsp Salt
- 1 tsp Celery Salt
- 1 tsp Oregano
- 1 tsp Marjoram
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Coriander
- 1 2-3 LB Whole Chicken
- 2 tbsp Avocado Oil
- Set smoker/grill to 250F-300F
- Mix dry rub ingredients together
- Rub whole bird in oil and coat well with the dry rub. Cover and let sit for 30 minutes.
- Tie legs together with butchers twine and place bird directly on the grate
- Smoke for 2-3 hours until the internal temperature of the breast hits 165F
